This is what’s called a “Papa Preparada” here in Mexico. This one in particular courtesy of El Toto in Villahermosa, Tabasco. It’s home made mashed potatoes, as in not from a box of flakes, with two types of cheese, sirloin steak and al pastor meat (My latinos will know what that is).
